Olivenöl in einer beschichteten Pfanne erhitzen und Frühlingszwiebel, Oliven, Pinienkerne und getrocknete Tomaten darin etwa 3 Minuten lang braten. Dann die Eier über der Pfanne aufschlagen und alles mit einem Kochlöffel gut vermengen. Die Pfanne von der Hitze nehmen und den frisch geriebenen Parmesan, Salz &#38; etwas Pfeffer beigeben. <p><strong>Zubereitung</strong>:</p>
<ol>
<li>Frühlingszwiebel, Oliven und getrocknete Tomaten grob hacken.</li>
<li>Olivenöl in einer beschichteten Pfanne erhitzen und Frühlingszwiebel, Oliven, Pinienkerne und getrocknete Tomaten darin etwa 3 Minuten lang braten.</li>
<li>Dann die Eier über der Pfanne aufschlagen und alles mit einem Kochlöffel gut vermengen.</li>
<li>Die Pfanne von der Hitze nehmen und den frisch geriebenen Parmesan, Salz &amp; etwas Pfeffer beigeben. Gut vermengen und servieren.</li>
