Das Festmahl

Festmahl mit Lamm, Minze, Ziegenkäse, Erdbeeren, Pilzen und Labneh

There are many good things in life. For me, one of the very best is a table loaded with fresh, delicious food.

Yesterday I invited some friends over for after work drinks and a little dinner – which then did not turn out as little as planned since we got excited about those regional, fresh, organic and truly beautiful herbs, veggies and fruits. We just had to empty my fridge and get creative with what we had. I have to say, this might even be my most favourite way to cook. Spontaneous, simple and colourful!
Also, this kind of creative cooking will save you a lot of money since you will use all of your leftover ingredients. Plus I hate to throw away food that has gone bad. It is not an option for me. I would rather eat until my stomach hurts before I would throw away good food.


So yesterday we put on good music, opened a bottle of good wine and started throwing all those ingredients together until my table was loaded with:

1) Salad of mint, chèvre and sunflower seeds


  • 3 good handful of fresh mint leaves
  • 1 role of chèvre
  • 3 tbsp of sunflower seeds (or pine nuts)
  • (lemon) olive oil
  • salt & pepper


  1. Remove the mint leaves from its stalk and rinse them in cold water.
  2. In a small pan shortly roast the sunflower seeds or pine nuts.
  3. Roughly cut the chèvre to small bite-sized pieces and warm them in the oven for about 8 minutes.
  4. Gently mix all ingredients, season with salt & pepper and drizzle with olive oil.

2) Lamb steak


  • 2 steaks of lamb
  • olive oil
  • salt & pepper


  1. Preheat the oven to 300°F.
  2. Heat a bit of olive oil in a pan.
  3. When very hot you fry the meat for a maximum of 2 minutes on each side.
  4. Move the meat to a casserole dish and slowly bake it in the oven for about 10-15 minutes until you get the degree of doneness you want.
  5. To serve, thinly slice the meat, generously drizzle with olive oil and season with salt & pepper. I like to use Maldon salt flakes for such occasions :)

3) Salad of fresh spinach and strawberries


  • 4 good handful of fresh spinach
  • 2 good handful of strawberries
  • good quality balsamic vinegar or balsamic creme
  • olive oil
  • salt & pepper


  • Cut the strawberries into halfs.
  • Mix with the spinach and season with salt & pepper.
  • Drizzle with olive oil and balsamic creme

Note: You can also add watermelon or replace the strawberries. It will be even better!

4) Grilled mushrooms

This will not need any explanation :)


5) Greek yoghurt with berries, honey, mint and orange blossom water


  • 2 cups of Greek yoghurt (I use the one with 10% fat)
  • loads of berries (strawberries, raspberries, blueberries)
  • one handful of fresh mint leaves
  • 1 tbsp of honey
  • 1 tsp of orange blossom water or rose water (optional)


  • Roughly chop half of the mint.
  • Mix the yoghurt with honey, orange blossom water, chopped mint and honey.
  • Topp with berries and the rest of the mint. Serve!


This will make a colourful, tasty summer dinner that is most enjoyable with a bottle of good red wine and baguette or whole sourdough bread!
