Frühstücksbrötchen mit Yoghurt, Nüssen und Früchten

This is a very easy, nourishing but still very pretty breakfast that you can prepare within a few minutes on early mornings or late weekend brunches.

I’ve actually become a big fan of fruit on bread during last years winter when I used to spread my morning bread with apple slices & cinnamon, orange & walnut or banana & almonds.

Obviously during summer season you can get a lot more creative with these pairings. I would now use peaches & poppy seeds, apricots & hazelnuts, strawberries & matcha powder, physalis & chia seeds or raspberries & ground cardamom. Today I just used what was left over from the weekend: cherries & cashew nuts, figs & pine nuts and currant & chia seeds.

For that version you will need:

  • one fig
  • some cherries
  • a handful of currant
  • 3 tbsp of sweet labneh or greek yoghurt
  • 2 tsp of honey
  • 1 tsp of chia seeds
  • 1 tsp of pine nuts
  • some cashew nuts
  • 3 slices of bread

  1. Spread each slice of bread with one tbsp of sweet labneh or greek yoghurt.
  2. Place sliced figs & pine nuts on one slice, cherries & cashew nuts on another slice and currants & chia seeds on the last slice of bread.
  3. Drizzle with honey and EAT!
